Ingredients
  

Dry ingredients
  • 2 cups almond flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
Wet ingredients
  • 3 large eggs
  • 1/4 cup honey or maple syrup
  • 1/4 cup melted coconut oil or butter
  • 1 teaspoon vanilla extract
Add-ins (optional)
  • 1/2 cup blueberries or chocolate chips optional

Method
 

  1. Preheat oven to 350°F (175°C) and line a muffin tin.
  2. Mix dry ingredients in a bowl.
  3. Whisk wet ingredients in a separate bowl.
  4. Combine wet and dry, fold in optional add-ins.
  5. Divide batter into muffin cups and bake 18-20 mins.
  6. Cool muffins before serving.
