  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 3 very ripe medium bananas, mashed about 1 1/2 cups
  • 1/2 cup unsweetened applesauce
  • 1/4 cup maple syrup optional, reduce if bananas are very sweet
  • 1 large egg
  • 1 teaspoon vanilla extract

Method
 

  1. Preheat oven to 375°F (190°C). Line muffin tin or grease well.
  2. Mix oats, baking soda, cinnamon, and salt in a large bowl.
  3. Add mashed bananas, applesauce, maple syrup (if using), egg, and vanilla to dry ingredients.
  4. Mix until just combined. Do not overmix. Batter will be thick.
  5. Divide batter evenly among muffin cups.
  6. Bake for 18-22 minutes, or until a toothpick comes out clean.
  7. Cool in tin for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For extra flavor, add chopped nuts or chocolate chips.
