Method
- Preheat oven to 400°F (200°C). Grease baking sheet.
- Pound chicken to 1/2 inch thickness. Season with salt and pepper.
- Beat eggs in a shallow bowl.
- Combine almond flour, 1/2 cup Parmesan, Italian seasoning, and garlic powder in another bowl.
- Dip chicken in egg mixture, let excess drip off.
- Dredge chicken in almond flour mixture, press lightly.
- Sear chicken in oil for 2-3 minutes per side until golden brown.
- Transfer chicken to baking sheet.
- Spoon marinara sauce over each cutlet.
- Top with mozzarella and remaining Parmesan cheese.
- Bake for 12-15 minutes, until chicken is cooked through and cheese is bubbly.
- Serve immediately.
Notes
For an extra crispy crust, try adding a tablespoon of nutritional yeast to the almond flour mixture.
