Method
- Mix the Wet Ingredients: Preheat oven to 375°F. Mash bananas, add egg, yogurt, honey, and vanilla. Whisk until combined.
- Add the Dry Ingredients: Add oats, flour, baking powder, baking soda, cinnamon, and salt. Stir gently until just combined.
- Bake: Spoon batter into muffin cups. Bake for 20–25 minutes, until golden and a toothpick comes out clean.
- Cool and Enjoy: Let muffins rest, then cool completely before peeling from liners.
Notes
To prevent sticking, lightly spray the muffin liners with oil before baking.
