Method
- Preheat oven to 350°F (175°C) and line a muffin tin.
- Mix dry ingredients in a bowl.
- Combine wet ingredients in another bowl.
- Pour wet into dry and stir until just combined. Fold in chocolate chips.
- Spoon batter into muffin tin and bake for 18-20 minutes. Cool before serving.

Use dairy-free chocolate chips for best results.
