Method
- Preheat oven to 375°F (190°C). Line muffin tin.
- Whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- Whisk together brown sugar, oil, eggs, and vanilla.
- Pour wet into dry. Mix until just combined.
- Fold in carrots, apple, raisins, nuts, and coconut (if using).
- Divide batter among muffin cups, filling 2/3 full.
- Bake for 18-22 minutes, until toothpick comes out clean.
- Cool in pan for 5 minutes, then transfer to wire rack.
Notes
For extra flavor, toast the nuts before adding them to the batter.
