Ingredients
  

Dry Ingredients
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
Wet Ingredients
  • 1 cup packed light brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
Add-ins
  • 1 cup finely grated carrots
  • 1/2 cup finely chopped apple
  • 1/2 cup raisins
  • 1/2 cup chopped walnuts or pecans
  • 1/4 cup shredded unsweetened coconut (optional) optional

Method
 

  1. Preheat oven to 375°F (190°C). Line muffin tin.
  2. Whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  3. Whisk together brown sugar, oil, eggs, and vanilla.
  4. Pour wet into dry. Mix until just combined.
  5. Fold in carrots, apple, raisins, nuts, and coconut (if using).
  6. Divide batter among muffin cups, filling 2/3 full.
  7. Bake for 18-22 minutes, until toothpick comes out clean.
  8. Cool in pan for 5 minutes, then transfer to wire rack.

Notes

For extra flavor, toast the nuts before adding them to the batter.
