  • 2 cups oat flour I use homemade
  • 1/4 cup cocoa powder
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 eggs flax eggs or regular eggs
  • 1/2 cup mini chocolate chips or 3/4 cup regular chocolate chips
  • 1/3 cup unsweetened dairy free yogurt
  • 1/2 cup unsweetened applesauce
  • 1/3 cup water or dairy free milk
  • 1 tsp pure vanilla extract
  • 1/2 cup pure maple syrup or honey
  • 1/4 cup olive or avocado oil or coconut oil, melted

Method
 

  1. Preheat oven to 350°F, line muffin tin with liners, and spray with cooking spray.
  2. Whisk dry ingredients, then add wet ingredients and mix until combined.
  3. Divide batter into muffin cups and bake for 25 minutes, or until a toothpick comes out clean.
  4. Let muffins cool slightly before enjoying!

Notes

For a richer chocolate flavor, add a tablespoon of instant coffee granules to the dry ingredients.
