Method
- Preheat oven to 350°F (175°C).
- Whisk together eggs, milk, salt, and pepper in a bowl.
- Pour egg mixture into a greased 9x13 inch baking dish.
- Bake for 20-25 minutes, or until eggs are set.
- Let cool slightly, then cut into 6 equal squares.
- Assemble sandwiches: Place one egg square on the bottom half of an English muffin, top with cheese and meat, then the top half of the muffin.
- Wrap each sandwich individually in plastic wrap.
- Store in the refrigerator for up to 3 days or in the freezer for up to 1 month.
- To reheat: Microwave for 1-2 minutes if refrigerated, or 2-3 minutes if frozen. Unwrap before microwaving.
Notes
For a vegetarian option, replace the meat with sliced tomatoes or avocado.
