  • 6 Eggs
  • 3 tablespoons Milk
  • to taste Salt and Pepper
  • 6 English Muffins split and toasted
  • 6 slices Cheese cheddar, mozzarella, or your choice
  • 6 slices Cooked turkey ham, turkey bacon, or beef sausage

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Whisk together eggs, milk, salt, and pepper in a bowl.
  3. Pour egg mixture into a greased 9x13 inch baking dish.
  4. Bake for 20-25 minutes, or until eggs are set.
  5. Let cool slightly, then cut into 6 equal squares.
  6. Assemble sandwiches: Place one egg square on the bottom half of an English muffin, top with cheese and meat, then the top half of the muffin.
  7. Wrap each sandwich individually in plastic wrap.
  8. Store in the refrigerator for up to 3 days or in the freezer for up to 1 month.
  9. To reheat: Microwave for 1-2 minutes if refrigerated, or 2-3 minutes if frozen. Unwrap before microwaving.

Notes

For a vegetarian option, replace the meat with sliced tomatoes or avocado.
