Ingredients
  

Bananas
  • 2 pieces ripe bananas, mashed
  • 1/3 cup melted butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • Pinch salt
  • 3/4 cup sugar
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon (optional)
  • 1/2 cup chopped nuts or chocolate chips (optional)

Method
 

  1. Preheat oven to 350°F (175°C) and line muffin tin.
  2. Mix mashed bananas and melted butter.
  3. Add vanilla, baking soda, and salt; stir well.
  4. Stir in sugar, then add flour, baking powder, and cinnamon; mix until just combined.
  5. Fold in nuts or chocolate chips if desired, then fill muffin cups 2/3 full.
  6. Bake for 18-20 minutes until golden and a toothpick comes out clean.
