- In a mixing bowl, whisk together the eggs until blended.
- Mix in the cottage cheese until smooth.
- Stir in the milk and cheddar cheese.
- Season with salt, pepper, garlic powder, and onion powder; mix well.
- Fold in parsley and spinach.
- Sift in baking powder and combine gently.
- Pour mixture into muffin cups until three-quarters full.
- Bake for 20-25 minutes or until golden brown.
- Cool slightly before removing from the tin.
