  • 1/2 cup shredded cheddar cheese

  • 1/4 cup chopped spinach
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon baking powder

Method
 

  1. Preheat oven to 375°F (190°C) and grease a muffin tin.
  2. In a mixing bowl, whisk together the eggs until blended.
  3. Mix in the cottage cheese until smooth.
  4. Stir in the milk and cheddar cheese.
  5. Season with salt, pepper, garlic powder, and onion powder; mix well.
  6. Fold in parsley and spinach.
  7. Sift in baking powder and combine gently.
  8. Pour mixture into muffin cups until three-quarters full.
  9. Bake for 20-25 minutes or until golden brown.
  10. Cool slightly before removing from the tin.
