Method
- Preheat oven to 375°F (190°C). Line a muffin tin.
- Whisk together flour, baking soda, cinnamon, nutmeg, and salt.
- Whisk together brown sugar, granulated sugar, eggs, oil, and vanilla.
- Add wet to dry ingredients; mix until combined.
- Fold in carrots, coconut, apple, raisins, and nuts.
- Fill muffin cups ¾ full.
- Sprinkle with seeds, if desired.
- Bake for 18-22 minutes, or until a toothpick comes out clean.
- Cool in tin, then transfer to a wire rack.
