- Preheat the oven to 375°F.
- Mix oats, flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt in a large bowl.
- Whisk egg, oil, and vanilla in a separate bowl.
- Pour wet mixture into dry ingredients and stir until just combined.
- Add mashed bananas and fold into the batter until fully incorporated.
- Divide batter into a muffin tin.
- Mix oats, cinnamon, brown sugar, and melted butter for topping. Sprinkle over muffin batter.
- Bake for 18-20 minutes, or until a toothpick comes out clean.
