  • 1.5 Cups oats old fashioned oats or rolled oats
  • 1.25 Cups flour
  • 0.5 cup sugar
  • 1.5 teaspoon baking powder
  • 1 teaspoon baking soda
  • 0.25 teaspoon salt
  • 1 teaspoon cinnamon
  • pinch ground nutmeg
  • 1 whole egg
  • 0.25 cup oil
  • 1 teaspoon vanilla
  • 1.5 cups ripe bananas mashed (about 3-4 bananas)
Topping
  • 0.5 cup oats old fashioned oats
  • 0.25 teaspoon cinnamon
  • 2 Tablespoons brown sugar
  • 2 Tablespoons melted butter

Method
 

  1. Preheat the oven to 375°F.
  2. Mix oats, flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt in a large bowl.
  3. Whisk egg, oil, and vanilla in a separate bowl.
  4. Pour wet mixture into dry ingredients and stir until just combined.
  5. Add mashed bananas and fold into the batter until fully incorporated.
  6. Divide batter into a muffin tin.
  7. Mix oats, cinnamon, brown sugar, and melted butter for topping. Sprinkle over muffin batter.
  8. Bake for 18-20 minutes, or until a toothpick comes out clean.

Notes

For extra flavor, add chocolate chips or nuts to the batter.
