  • 1 tablespoon baking powder
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon salt
Wet Ingredients
  • 2 large eggs
  • 0.5 cup Greek yogurt
  • 0.33 cup honey or maple syrup
  • 1 teaspoon vanilla extract
Add-ins
  • 0.5 cup fresh or dried fruit (e.g., blueberries, raspberries)
  • 0.5 cup chopped nuts (e.g., walnuts, almonds)
  • 0.5 cup dark chocolate chips
  • 1 ripe mashed banana (optional for sweetness and moisture)

Method
 

  1. Preheat oven to 350°F (175°C) and line a muffin tin.
  2. Combine dry ingredients in a large bowl.
  3. Whisk wet ingredients in a separate bowl.
  4. Pour wet into dry and stir gently until just combined.
  5. Fold in add-ins evenly.
  6. Divide batter among muffin cups, filling 3/4 full. Bake for 18-22 minutes.
  7. Cool in pan before transferring to a wire rack.

Notes

For extra moist muffins, let the batter rest for 10 minutes before baking.
