Muffin Ingredients
  • 2 ripe bananas mashed
  • 2 large eggs
  • 1/2 cup Greek yogurt
  • 1/4 cup milk of choice
  • 1/4 cup maple syrup or honey
  • 1 tsp vanilla extract
  • 1 cup oat flour
  • 1/2 cup chocolate protein powder
  • 1/4 cup unsweetened cocoa powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/3 cup chocolate chips optional

Method
 

  1. Preheat oven to 350°F (175°C) and line a muffin tin.
  2. Mash bananas in a large bowl.
  3. Add eggs, yogurt, milk, syrup, and vanilla. Mix well.
  4. Stir in flour, protein powder, cocoa, baking soda, and salt. Don’t overmix.
  5. Fold in chocolate chips, if using.
  6. Spoon batter into muffin tin, filling 3/4 full.
  7. Bake for 18–22 minutes, until a toothpick comes out clean.
  8. Cool in tin for 5 minutes, then transfer to a wire rack.

Notes

For best results, use ripe bananas and don't overmix the batter.
