Ingredients
  

Wet Ingredients
  • 1 cup canned pumpkin puree
  • 1/2 cup honey
  • 1/4 cup vegetable oil
  • 2 large eggs
Dry Ingredients
  • 1 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon salt

Method
 

  1. Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Mix pumpkin, honey, oil, and eggs until smooth.
  3. Combine dry ingredients in a separate bowl.
  4. Gradually add dry to wet, stir until just combined.
  5. Fill muffin cups 2/3 full and bake 18-20 minutes.
  6. Cool muffins for 5 minutes before transferring to a wire rack.

Store muffins in an airtight container for up to 2 days.
