Method
- Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
- Mix pumpkin, honey, oil, and eggs until smooth.
- Combine dry ingredients in a separate bowl.
- Gradually add dry to wet, stir until just combined.
- Fill muffin cups 2/3 full and bake 18-20 minutes.
- Cool muffins for 5 minutes before transferring to a wire rack.
