  • 1/2 cup almond flour
  • 1/4 cup unsweetened cocoa powder
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup erythritol or other keto-friendly sweetener
  • 2 tablespoons melted coconut oil or butter
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 tablespoons unsweetened almond milk or heavy cream
  • Optional: sugar-free chocolate chips

Method
 

  1. Preheat oven to 350°F (175°C). Grease a small baking dish.
  2. Combine almond flour, cocoa powder, baking powder, salt, and sweetener in a bowl.
  3. Add melted coconut oil/butter, egg, and vanilla extract. Mix well.
  4. Stir in almond milk/cream until the batter is smooth.
  5. If desired, fold in sugar-free chocolate chips.
  6. Pour batter into the prepared baking dish.
  7. Bake for 20-25 minutes, or until a toothpick comes out with moist crumbs.
  8. Let cool completely before cutting into squares.

Notes

For a richer flavor, use melted butter instead of coconut oil.
