  • 2/3 cup powdered sugar-free sweetener (127g)
  • 1/3 cup Dutch cocoa powder (27g)
  • 1/2 tsp baking soda (3g)
  • 1/4 tsp salt (1.5g)
  • 1/2 cup unsweetened creamy peanut butter (or nut/seed butter of choice (128g))
  • 2 large eggs
  • 1/4 cup sugar-free chocolate chips (56g)

Method
 

  1. Preheat oven to 350°F. Line a cookie sheet with parchment paper.
  2. Combine sweetener, cocoa powder, baking soda, and salt. Add peanut butter and eggs, stir until smooth. Stir in chocolate chips.
  3. Drop ~1 inch balls of dough 3 inches apart on lined sheet. Flatten slightly with damp fingers.
  4. Bake 7-8 minutes. Do not over-bake.
  5. Allow to cool, and enjoy!

Store cookies in an airtight container for up to a week.
