Ingredients
  

Chicken
  • 2 boneless, skinless chicken breasts
Seasoning
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • Salt and pepper to taste
Salad
  • 1 cup chopped cucumber
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup kalamata olives
  • 1 tbsp lemon juice
  • Fresh parsley for garnish

Method
 

  1. Season chicken with olive oil, oregano, garlic powder, salt, and pepper.
  2. Grill or pan-fry chicken until fully cooked, about 6-7 minutes per side. Let rest before slicing.
  3. In a bowl, combine cucumber, cherry tomatoes, red onion, feta cheese, and olives.
  4. Drizzle with lemon juice and toss gently.
  5. Slice chicken and place on top of the salad.
  6. Garnish with fresh parsley before serving.
