  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 head cauliflower, riced
  • 1 cup shredded cheddar cheese
  • 1 avocado avocado, diced
  • 1/2 cup salsa (low carb)
  • Sour cream or Greek yogurt Optional

Method
 

  1. Brown ground beef in a skillet, drain grease.
  2. Add olive oil, garlic powder, onion powder, salt, and pepper. Stir.
  3. Cook cauliflower rice per package directions.
  4. Divide cauliflower rice among meal prep containers.
  5. Top with ground beef, cheese, avocado, and salsa.
  6. Optional: Add sour cream or Greek yogurt.
  7. Store in refrigerator for up to 4 days.

Notes

Adjust seasonings to your preference. You can also add other low-carb vegetables like bell peppers or spinach.
