Method
- Preheat oven to 375°F (190°C).
- Spray a 12-cup muffin tin with cooking spray.
- Whisk eggs, salt, and pepper in a large bowl.
- Add bell peppers, spinach, onion, mushrooms, and sausage (if using). Stir well.
- Pour egg mixture into muffin tin, filling each cup 3/4 full.
- Bake for 20-25 minutes, until set and lightly golden brown.
- Cool in tin before removing and serving. Store leftovers in refrigerator.
Notes
These muffins are great for meal prepping! You can easily double or triple the recipe to make enough for the whole week.
