Method
- Preheat oven to 375°F and line a 12-cup muffin tin.
- Combine oats and milk; let stand for 10 minutes.
- Add oil, egg, maple syrup, and vanilla; stir well.
- Whisk flour, baking powder, baking soda, and salt separately.
- Add dry to wet ingredients; stir until just combined.
- Fold in desired mix-ins.
- Fill each muffin liner about ¾ full.
- Bake for 18-22 minutes, or until a toothpick comes out clean.
- Cool in tin, then transfer to a wire rack.
Notes
For a richer flavor, use brown butter instead of neutral oil.
