  • 2 ripe bananas mashed
  • 1/4 cup protein powder whey, casein, or plant-based
  • 1/4 cup rolled oats
  • 1 egg
  • 1/4 cup milk dairy or non-dairy
  • 1/4 cup honey or maple syrup
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • Optional: chocolate chips, nuts, or cinnamon

Method
 

  1. Preheat oven to 375°F (190°C) and line a muffin tin.
  2. In a large bowl, mash the bananas.
  3. Add protein powder, oats, egg, milk, and honey/maple syrup. Mix well.
  4. In a separate bowl, whisk baking powder, baking soda, and salt.
  5. Add dry ingredients to wet ingredients and mix until just combined.
  6. If desired, fold in chocolate chips, nuts, or cinnamon.
  7. Fill each muffin liner about 2/3 full.
  8. Bake for 18-20 minutes, or until a toothpick comes out clean.
  9. Let cool in the tin before transferring to a wire rack.

Notes

For a richer flavor, use brown butter instead of regular butter.
