Method
- Preheat oven to 375°F (190°C) and line a muffin tin.
- In a large bowl, mash the bananas.
- Add protein powder, oats, egg, milk, and honey/maple syrup. Mix well.
- In a separate bowl, whisk baking powder, baking soda, and salt.
- Add dry ingredients to wet ingredients and mix until just combined.
- If desired, fold in chocolate chips, nuts, or cinnamon.
- Fill each muffin liner about 2/3 full.
- Bake for 18-20 minutes, or until a toothpick comes out clean.
- Let cool in the tin before transferring to a wire rack.
Notes
For a richer flavor, use brown butter instead of regular butter.
