Method
- Preheat oven to 320F/160C and line a 9x9-inch pan with parchment paper.
- Make The Crust. Mix dry ingredients, then add melted butter and vanilla. Mix until sandy.
- Press crust into the pan and bake for 15 minutes.
- Make The Chocolate Pudding. Mix gelatin powder with 1/4 cup heavy cream and set aside.
- Add remaining heavy cream, sweetener, cocoa powder, and salt to a saucepan over medium-low heat.
- Stir constantly for 5 minutes until bubbles form.
- Remove from heat, mix in vanilla and gelatin. Refrigerate for 30 minutes.
- Make The Cheesecake Layer. Mix cream cheese and sweetener until creamy. Add cream and mix until smooth.
- Spread cheesecake filling over the cooled crust and refrigerate.
- Make The Whipped Cream Topping. Mix cream, sweetener, and vanilla until stiff peaks form.
- Spread chocolate pudding over the cheesecake layer.
- Top with whipped cream, sprinkle with chocolate shavings and refrigerate for at least one hour.
- Enjoy.
Notes
For a richer flavor, use dark cocoa powder. Adjust sweetener to your preference.
