Ingredients
  

Crust
  • 1.5 cups almond flour
  • 3 tbsp cocoa powder
  • 0.25 cup sweetener
  • 0.25 cup butter melted
  • 1 tbsp vanilla extract
  • 1 pinch salt
Chocolate Pudding
  • 2 cups heavy cream
  • 1.5 tsp halal gelatin powder
  • 0.33 cup sweetener
  • 0.25 cup cocoa powder
  • 1 tsp vanilla extract
  • 0.25 tsp salt
Cheesecake Layer
  • 8 oz cream cheese
  • 0.33 cup sweetener
  • 1 tsp vanilla extract
  • 0.5 cup heavy whipping cream
Whipped Cream Topping
  • 1 cup heavy cream
  • 3 tbsp sweetener
  • 1 tsp vanilla extract

Method
 

  1. Preheat oven to 320F/160C and line a 9x9-inch pan with parchment paper.
  2. Make The Crust. Mix dry ingredients, then add melted butter and vanilla. Mix until sandy.
  3. Press crust into the pan and bake for 15 minutes.
  4. Make The Chocolate Pudding. Mix gelatin powder with 1/4 cup heavy cream and set aside.
  5. Add remaining heavy cream, sweetener, cocoa powder, and salt to a saucepan over medium-low heat.
  6. Stir constantly for 5 minutes until bubbles form.
  7. Remove from heat, mix in vanilla and gelatin. Refrigerate for 30 minutes.
  8. Make The Cheesecake Layer. Mix cream cheese and sweetener until creamy. Add cream and mix until smooth.
  9. Spread cheesecake filling over the cooled crust and refrigerate.
  10. Make The Whipped Cream Topping. Mix cream, sweetener, and vanilla until stiff peaks form.
  11. Spread chocolate pudding over the cheesecake layer.
  12. Top with whipped cream, sprinkle with chocolate shavings and refrigerate for at least one hour.

Notes

For a richer flavor, use dark cocoa powder. Adjust sweetener to your preference.
