  • 3 medium bananas mashed- about 1.5 cups
  • 1/2 cup almond butter
  • 1/4 cup coconut oil melted
  • 1 tsp vanilla extract
  • 1/2 cup coconut sugar can sub any other sugar
  • 1/2 tsp ground cinnamon
  • 1/2 tsp sea salt
  • 1.5 cups all purpose flour
  • 1 tsp baking soda
  • 1/2 cup walnuts
  • 8 tbsp course sugar optional

Method
 

  1. Preheat oven to 375F and prepare a muffin tin.
  2. Mix bananas, almond butter, coconut oil, sugar, vanilla, and cinnamon.
  3. Sift in flour, baking soda, and salt.
  4. Fold ingredients, then add walnuts.
  5. Add batter to muffin tins.
  6. Sprinkle with sugar and walnuts.
  7. Bake for 23-25 minutes.
  8. Let cool and enjoy!

Notes

For best results, use ripe bananas.
